1 medium head cauliflower 2 tbsp butter or avocado oil Salt and pepper to taste Garlic powder (optional)
Instructions
- Cut cauliflower into florets
- Pulse in food processor until rice-sized (dont over-process)
- Heat butter/oil in large skillet over medium-high heat
- Add cauliflower rice and spread evenly
- Cook 5-7 minutes, stirring occasionally
- Season with salt, pepper, and garlic powder
