Healthy homemade mayonnaise made with avocado oil. Perfect for keto salads and wraps.

Ingredients

1 ripe avocado 1 egg yolk (room temperature) 1 cup avocado oil (or light olive oil) 1 tbsp lemon juice 1 tsp Dijon mustard (optional) Salt to taste

Instructions

  1. In food processor/blender: Add avocado, egg yolk, lemon juice, mustard, pinch of salt
  2. Blend until smooth
  3. With motor running, SLOWLY drizzle in oil (very slow stream)
  4. Blend until thick and creamy (2-3 minutes)
  5. Store in airtight container in fridge (lasts 5-7 days)
