Ingredients
1 ripe avocado 1 egg yolk (room temperature) 1 cup avocado oil (or light olive oil) 1 tbsp lemon juice 1 tsp Dijon mustard (optional) Salt to taste
Instructions
- In food processor/blender: Add avocado, egg yolk, lemon juice, mustard, pinch of salt
- Blend until smooth
- With motor running, SLOWLY drizzle in oil (very slow stream)
- Blend until thick and creamy (2-3 minutes)
- Store in airtight container in fridge (lasts 5-7 days)
