Ingredients

  • 12 oz Italian sausage (mild or spicy), casings removed
  • 4 large eggs
  • 1 tbsp olive oil or butter
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 small zucchini, diced
  • 1/2 cup mushrooms, sliced
  • 1/2 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup fresh spinach
  • 1/2 cup shredded cheddar or mozzarella cheese
  • 1 avocado, sliced (for serving)
  • Salt and pepper to taste
  • 1/2 tsp Italian seasoning
  • Red pepper flakes (optional)

Toppings:

  • Fresh parsley or cilantro
  • Sour cream

Instructions

Cook the Sausage:

  1. Heat a large oven-safe skillet over medium-high heat.
  2. Add Italian sausage, breaking it up with a wooden spoon. Cook 5-7 minutes until browned and cooked through.
  3. Remove sausage to a plate, leaving drippings in pan.

Cook the Vegetables:

  1. Add olive oil or butter to the same skillet.
  2. Add diced bell peppers, zucchini, mushrooms, and onion. Season with Italian seasoning, salt, and pepper.
  3. Sauté 5-7 minutes until vegetables are tender. Add garlic and spinach in last minute, cooking until spinach wilts.
  4. Return sausage to skillet and stir to combine.

Add the Eggs:

  1. Make 4 wells in the vegetable-sausage mixture.
  2. Crack an egg into each well.
  3. Sprinkle shredded cheese over the entire skillet.
