Ingredients

- 12 oz Italian sausage (mild or spicy), casings removed
- 4 large eggs
- 1 tbsp olive oil or butter
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 small zucchini, diced
- 1/2 cup mushrooms, sliced
- 1/2 medium onion, diced
- 2 cloves garlic, minced
- 1 cup fresh spinach
- 1/2 cup shredded cheddar or mozzarella cheese
- 1 avocado, sliced (for serving)
- Salt and pepper to taste
- 1/2 tsp Italian seasoning
- Red pepper flakes (optional)
Toppings:
- Fresh parsley or cilantro
- Sour cream
- Hot sauce (optional)
Instructions
Cook the Sausage:
- Heat a large oven-safe skillet over medium-high heat.
- Add Italian sausage, breaking it up with a wooden spoon. Cook 5-7 minutes until browned and cooked through.
- Remove sausage to a plate, leaving drippings in pan.
Cook the Vegetables:
- Add olive oil or butter to the same skillet.
- Add diced bell peppers, zucchini, mushrooms, and onion. Season with Italian seasoning, salt, and pepper.
- Sauté 5-7 minutes until vegetables are tender. Add garlic and spinach in last minute, cooking until spinach wilts.
- Return sausage to skillet and stir to combine.
Add the Eggs:
- Make 4 wells in the vegetable-sausage mixture.
- Crack an egg into each well.
- Sprinkle shredded cheese over the entire skillet.
- Cover and cook on stovetop 3-4 minutes until egg whites are set but yolks still runny (or cook to your preference).

- After adding eggs and cheese, transfer skillet to preheated 375°F oven for 8-10 minutes.
