Ingredients
CHICKEN: 2 boneless, skinless chicken breasts (8 oz each, about 1 lb total) OR 4 smaller breasts (4 oz each)
DRY RUB SEASONING: 1 tbsp avocado oil or olive oil (to help seasoning stick) 1 tsp garlic powder 1 tsp onion powder 1 tsp paprika (smoked or regular) 1/2 tsp Italian seasoning 1/2 tsp salt 1/4 tsp black pepper Optional: 1/4 tsp cayenne for heat
OPTIONAL VARIATIONS: Lemon Herb: Add 1 tsp lemon zest, 1 tsp dried thyme Ranch Style: Add 1 tsp dried dill, 1/2 tsp dried parsley Cajun: Add 1 tsp Cajun seasoning instead of Italian Southwest: Add 1 tsp cumin, 1/2 tsp chili powder
Instructions
PREP CHICKEN:
- Pat chicken breasts completely dry with paper towels (critical!)
- If breasts are thick (over 1 inch), pound to even thickness using meat mallet
- Rub chicken with 1 tbsp oil on all sides
- In small bowl, mix all dry seasonings
- Season chicken generously on both sides with spice mixture
- Let sit 5-10 minutes at room temp (optional but helps)
AIR FRY:
- Preheat Ninja air fryer to 375°F for 3-5 minutes
- Place chicken in single layer in air fryer basket (don't overcrowd)
- Air fry for 10 minutes
- Flip chicken breasts
- Air fry for 7-10 more minutes (total 17-20 minutes)
- Check internal temperature: should read 165°F in thickest part
REST:
- Remove chicken and let rest 5 minutes before slicing
- Internal temp will rise to 165°F+ during rest
- Slice against the grain for most tender result
TIMING GUIDE (at 375°F):
- Small breasts (4-6 oz): 12-15 minutes total
- Medium breasts (7-9 oz): 16-18 minutes total
- Large breasts (10-12 oz): 18-22 minutes total
- Always verify with meat thermometer at 165°F
TIPS FOR PERFECT CHICKEN:
- DRY chicken thoroughly - moisture = rubbery skin
- Even thickness = even cooking (pound if needed)
- Don't skip the flip halfway through
- Use meat thermometer - guessing leads to dry chicken
- Let it REST - juices redistribute, stays moist
- Don't overcrowd air fryer basket
NINJA GLASS AIR FRYER NOTES:
- Glass basket heats evenly - perfect for chicken
- May cook slightly faster than traditional air fryers
- Start checking temp at 15 minutes for medium breasts
- Can see browning through glass - helpful!
