Ingredients

8 large eggs 4 oz diced ham (or turkey ham) 1/2 cup diced bell peppers (mix of red, green, yellow) 1/4 cup diced onion 1/2 cup shredded cheddar cheese (or cheese of choice) 2 tbsp butter (for cooking) Salt and pepper to taste Optional: hot sauce, fresh herbs (chives, parsley)

Instructions

  1. Prep ingredients: Dice ham, bell peppers, and onion into small, uniform pieces.

  2. Heat a large skillet over medium heat and add 1 tbsp butter.

  3. Sauté vegetables: Add diced onion and bell peppers. Cook 3-4 minutes until softened and slightly caramelized.

  4. Add ham: Stir in diced ham and cook 2 minutes until heated through and edges slightly crispy.

  5. Scramble eggs: In a bowl, whisk eggs with salt and pepper. Add remaining 1 tbsp butter to skillet.
