Ingredients

2 cups almond flour 4 eggs (separated) 1/4 cup cream cheese (softened) 1/4 cup heavy cream 2 tbsp melted butter 2 tsp baking powder 1 tsp vanilla extract Pinch of salt 2 tbsp erythritol or sweetener (optional)

For serving: Berries (1/4 cup per person) Whipped cream Sugar-free syrup

Instructions

  1. Preheat waffle iron
  2. Separate eggs - whites in one bowl, yolks in another
  3. Beat egg whites until stiff peaks form, set aside
  4. In separate bowl, mix egg yolks, cream cheese, heavy cream, melted butter, vanilla
  5. Add almond flour, baking powder, salt, sweetener - mix until smooth
  6. Gently fold in beaten egg whites (don't overmix)
  7. Spray waffle iron with cooking spray
  8. Pour batter into waffle iron (amount depends on size)
  9. Cook 3-5 minutes until golden and crispy
  10. Serve immediately with berries, whipped cream, sugar-free syrup Makes 4-6 waffles depending on waffle iron size
