Ingredients
2 cups almond flour 4 eggs (separated) 1/4 cup cream cheese (softened) 1/4 cup heavy cream 2 tbsp melted butter 2 tsp baking powder 1 tsp vanilla extract Pinch of salt 2 tbsp erythritol or sweetener (optional)
For serving: Berries (1/4 cup per person) Whipped cream Sugar-free syrup
Instructions
- Preheat waffle iron
- Separate eggs - whites in one bowl, yolks in another
- Beat egg whites until stiff peaks form, set aside
- In separate bowl, mix egg yolks, cream cheese, heavy cream, melted butter, vanilla
- Add almond flour, baking powder, salt, sweetener - mix until smooth
- Gently fold in beaten egg whites (don't overmix)
- Spray waffle iron with cooking spray
- Pour batter into waffle iron (amount depends on size)
- Cook 3-5 minutes until golden and crispy
- Serve immediately with berries, whipped cream, sugar-free syrup Makes 4-6 waffles depending on waffle iron size
