Ingredients
8-10 eggs 8 oz spicy Italian sausage 1 bell pepper (diced) 2 jalapeños (diced, seeds removed for less heat) 1/2 onion (diced) 1 cup shredded cheddar cheese 1/2 avocado per person (sliced) 4 tbsp salsa (sugar-free) 4 tbsp sour cream 2 tbsp butter or olive oil Salt and pepper to taste Optional: Fresh cilantro
Instructions
- Cook sausage in large skillet over medium-high heat, breaking into crumbles
- When cooked through, remove and set aside (leave fat in pan)
- Add butter if needed, sauté peppers, jalapeños, onions until soft (5-7 min)
- Whisk eggs with salt and pepper
- Reduce heat to medium-low, add eggs to skillet
- Gently scramble, stirring occasionally
- When eggs are almost set, add cooked chorizo back in
- Sprinkle cheese on top, let melt
- Remove from heat
- Serve topped with avocado slices, salsa, sour cream, cilantro
