Loaded scramble with sausage, peppers, jalapeños, and all the toppings. Perfect high-protein breakfast.

Ingredients

8-10 eggs 8 oz spicy Italian sausage 1 bell pepper (diced) 2 jalapeños (diced, seeds removed for less heat) 1/2 onion (diced) 1 cup shredded cheddar cheese 1/2 avocado per person (sliced) 4 tbsp salsa (sugar-free) 4 tbsp sour cream 2 tbsp butter or olive oil Salt and pepper to taste Optional: Fresh cilantro

Instructions

  1. Cook sausage in large skillet over medium-high heat, breaking into crumbles
  2. When cooked through, remove and set aside (leave fat in pan)
  3. Add butter if needed, sauté peppers, jalapeños, onions until soft (5-7 min)
  4. Whisk eggs with salt and pepper
  5. Reduce heat to medium-low, add eggs to skillet
  6. Gently scramble, stirring occasionally
  7. When eggs are almost set, add cooked chorizo back in
  8. Sprinkle cheese on top, let melt
  9. Remove from heat
  10. Serve topped with avocado slices, salsa, sour cream, cilantro
