Middle Eastern-style eggs poached in spicy tomato sauce. Flavorful, low-carb breakfast that's different from typical eggs.

Ingredients

4-6 eggs 1 can (14 oz) diced tomatoes (no sugar added) 1 bell pepper (diced) 1/2 onion (diced) 3 cloves garlic (minced) 2 tbsp olive oil 1 tsp cumin 1 tsp paprika 1/2 tsp chili powder (adjust to taste) Salt and pepper to taste Fresh parsley or cilantro Optional: Feta cheese crumbles Optional: Avocado slices for serving

Instructions

  1. Heat olive oil in large skillet over medium heat
  2. Sauté onion and bell pepper until soft (5-7 min)
  3. Add garlic, cumin, paprika, chili powder - cook 1 minute until fragrant
  4. Add diced tomatoes with juice, salt, pepper
  5. Simmer 10-15 minutes until sauce thickens
  6. Make small wells in the sauce with a spoon
  7. Crack eggs into the wells
  8. Cover and cook 5-7 minutes until eggs are set but yolks still runny
  9. Garnish with fresh herbs and feta if desired
  10. Serve with avocado slices on the side
