Ingredients
4-6 eggs 1 can (14 oz) diced tomatoes (no sugar added) 1 bell pepper (diced) 1/2 onion (diced) 3 cloves garlic (minced) 2 tbsp olive oil 1 tsp cumin 1 tsp paprika 1/2 tsp chili powder (adjust to taste) Salt and pepper to taste Fresh parsley or cilantro Optional: Feta cheese crumbles Optional: Avocado slices for serving
Instructions
- Heat olive oil in large skillet over medium heat
- Sauté onion and bell pepper until soft (5-7 min)
- Add garlic, cumin, paprika, chili powder - cook 1 minute until fragrant
- Add diced tomatoes with juice, salt, pepper
- Simmer 10-15 minutes until sauce thickens
- Make small wells in the sauce with a spoon
- Crack eggs into the wells
- Cover and cook 5-7 minutes until eggs are set but yolks still runny
- Garnish with fresh herbs and feta if desired
- Serve with avocado slices on the side
