Ingredients

8-10 eggs 1/2 lb turkey sausage (cooked and crumbled) 1 bell pepper (diced) 1/2 onion (diced) 1 cup spinach (chopped) 1 cup cheddar or mozzarella cheese (shredded) 2 tbsp butter or olive oil 1/4 cup heavy cream Salt and pepper to taste Garlic powder, Italian seasoning

Instructions

  1. Preheat oven to 375°F
  2. Cook turkey sausage in oven-safe skillet until browned, remove and set aside
  3. In same skillet, sauté peppers and onions in butter until soft (5 min)
  4. Add spinach and cook until wilted (2 min)
  5. Whisk eggs with cream, salt, pepper, garlic powder, Italian seasoning
  6. Add cooked sausage back to skillet with vegetables
  7. Pour egg mixture over everything
  8. Sprinkle cheese on top
  9. Transfer to oven and bake 20-25 minutes until set and golden
  10. Let cool 5 minutes, slice into wedges
  11. Serve with avocado slices
