Ingredients
8-10 eggs 1/2 lb turkey sausage (cooked and crumbled) 1 bell pepper (diced) 1/2 onion (diced) 1 cup spinach (chopped) 1 cup cheddar or mozzarella cheese (shredded) 2 tbsp butter or olive oil 1/4 cup heavy cream Salt and pepper to taste Garlic powder, Italian seasoning
Instructions
- Preheat oven to 375°F
- Cook turkey sausage in oven-safe skillet until browned, remove and set aside
- In same skillet, sauté peppers and onions in butter until soft (5 min)
- Add spinach and cook until wilted (2 min)
- Whisk eggs with cream, salt, pepper, garlic powder, Italian seasoning
- Add cooked sausage back to skillet with vegetables
- Pour egg mixture over everything
- Sprinkle cheese on top
- Transfer to oven and bake 20-25 minutes until set and golden
- Let cool 5 minutes, slice into wedges
- Serve with avocado slices
