Traeger 3-2-1 Ribs

Fall-off-the-bone tender smoked ribs using the famous 3-2-1 method: 3 hours smoke, 2 hours wrapped, 1 hour sauced.
Ingredients
2 racks baby back ribs 4 tablespoons yellow mustard 6 tablespoons BBQ rub (Traeger Pork & Poultry or your favorite) 6 tablespoons butter 1 cup brown sugar 1 cup hard apple cider or beer 2 cups barbecue sauce
Instructions
Remove the membrane from the back of the ribs using a paper towel for grip. Coat ribs with mustard on both sides (helps the rub stick). Apply BBQ rub generously on both sides. Preheat smoker to 180°F. Place ribs meat-side up on the grill and smoke for 3 hours until internal temp reaches 160°F. Increase grill temperature to 225°F. Lay out double-layer foil, place ribs on top, add butter and brown sugar. Pour apple cider or beer around the ribs and seal foil tightly. Return wrapped ribs to grill and cook for 2 hours until internal temp reaches 195-205°F. Unwrap ribs and brush generously with BBQ sauce. Return to grill at 225°F for 30-60 minutes until sauce sets and caramelizes. Rest for 10-15 minutes before slicing and serving.
The 3-2-1 method is a classic Traeger pellet grill technique that produces perfectly tender, smoky ribs every time.
